To make chocolate truffles, ganache and toffee inspired by Wiseman House Chocolates, you’ll need the following ingredients:

  • 8 ounces of good quality chocolate, chopped (I recommend using dark chocolate, but you can also use milk or white chocolate)
  • 2/3 cup of heavy cream
  • 2 tablespoons of butter, softened
  • 1/4 teaspoon of salt

  • 1/4 cup of water
  • 1/4 cup of light corn syrup
  • 1/4 teaspoon of baking soda
  • 1/4 cup of chopped nuts, chocolate chips, or other toppings for the toffee

You’ll also need the following equipment:

  • A microwave-safe bowl or a double boiler
  • A whisk or a spatula
  • A baking dish or a shallow pan
  • A melon baller or a small cookie scoop
  • A baking sheet lined with parchment paper or a silicone mat
  • A candy thermometer
  • A saucepan
  • A wooden spoon
  • A heatproof spatula
  • A sharp knife or a metal spatula

Here are the steps to make chocolate truffles, ganache and toffee inspired by Wiseman House Chocolates:

  1. To make the ganache, place the chocolate, cream, butter, and salt in a microwave-safe bowl or a double boiler. Heat in the microwave for 30-second intervals, stirring after each one, or over simmering water, stirring occasionally, until the chocolate is melted and the mixture is smooth and shiny. Stir in the liqueur or extract of your choice. Pour the ganache into a baking dish or a shallow pan and refrigerate for at least 4 hours or overnight, until firm.
  2. To make the truffles, use a melon baller or a small cookie scoop to scoop out balls of ganache and place them on a baking sheet lined with parchment paper or a silicone mat. If the ganache is too soft, refrigerate it for a few minutes until it is easier to handle. Roll the balls between your palms to smooth them out and coat them with cocoa powder, nuts, sprinkles, or melted chocolate. Refrigerate the truffles until ready to serve or store them in an airtight container in the refrigerator for up to a week.
  3. To make the toffee, combine the sugar, water, and corn syrup in a saucepan over medium-high heat. Stir until the sugar dissolves, then attach a candy thermometer to the side of the pan. Cook, without stirring, until the temperature reaches 300°F, or the hard-crack stage. This may take 15 to 20 minutes, depending on your stove and pan. Watch the mixture carefully, as it can burn easily. Remove the pan from the heat and stir in the baking soda. The mixture will bubble up, so be careful. Pour the toffee onto the same baking sheet you used for the truffles and spread it into a thin layer with a heatproof spatula. Sprinkle the chopped nuts, chocolate chips, or other toppings over the toffee while it is still hot. Let the toffee cool completely, then break it into pieces with a sharp knife or a metal spatula.
